HN: Ecology of Food: In this introductory course, students will will explore topics such as: the Canada Food Guide and nutrient standards; impact of environment, agriculture, preservation and cooking methods on nutrient quality; concepts of whole, local, seasonal, processed foods; introduction to microbiome; overview of nutrients and where to find them; overview of traditional diets; research project (presentation) of modern diets as a framework for assessing food trends in relation to personal needs; food diary assignment (self) linking nutrients to food eaten; overview of digestion, how to optimize, effects of stress and lifestyle on digestive capacity. [includes energetic qualities of food, as per anthroposophy and TCM]
